This is such an exciting course and one that Angela believes is the beginning of everything in terms of cooking and eating, “flavour”!  Join us for a great day in the kitchen exploring spices, herbs, essences, pastes and other elements that give flavour such as smoking.

Angela will show you how to utilise your store-cupboard ingredients and turn up the volume on your home cooking maximising enjoyment.  We will make spice combinations, marinades, rubs and pastes then turn them into delicious classic dishes for you to take home and enjoy.  You will also learn other skills such as knife work, different cooking methods and simple smoking.

Here’s your menu-

  • Angela will demonstrate a simple plate of Sashimi, a Mango and Passion Fruit Salsa (with chicken) and a Herb and Citrus Rub (for duck breast)- you will taste each of these.
  • Then make a Molee paste using 3 types of chilli and turn it into a full bodied Mexican Beef Molee
  • Prepare a delicious spice rub for some Salmon and hot smoke it on the BBQ
  • Make a complex Masala Paste for a Winter Vegetable Curry with Coconut
  • We will also make Harissa paste for Shakshuka which we will have for lunch with a fragrant seasonal salad

Please bring 3 containers for your main dishes, plus a small jar for some Harissa Paste which you can take home.
