One of Angela’s favourite themes, so be ready for a fun day with lots of flavour from Morocco.  Together you will explore this rich and aromatic cuisine, preparing and making a range of Byzantine empire inspired dishes. This menu is perfect for entertaining, so why not organise your supper party? This feast will serve 4 people and give them plenty to ‘Mmmmm’ about!

Here is your delicious menu:

  • Smokey Aubergine and Tomato Salad – We will smoke the aubergine and cook on the Hibachi indoor charcoal grill
  • A slow cooked Moroccan Chicken dish, with Green Olives and Preserved Lemon on a bed of lentils and onion, topped with shredded pastry
  • Khobz Bread – To tear, share and dip
  • Moroccan Kefta with Feggous Salad (refreshing cucumber) and Angela’s Khobz Bread and Hummus – this will be served for lunch
  • Mlewza – Moroccan Almond Macaroons

All notes and recipes will be sent by email following the class.

Please bring the following containers to take your food home: 1 x 1L container, 1 x 1.5L Container, 1 x 500g container or small plate for your cookies. We will wrap your bread.
