Yummy Potato Salad

To make, simply mix all the ingredients together whilst the potatoes are warm, that way they absorb more flavour.

Ingredients

  • 500g cooked new potatoes (make this when the potatoes are just drained)
  • A handful of French beans, just cooked and sliced
  • ½ a red onion thinly sliced and pre-soaked in water for 20 minutes
  • 1 fat clove of garlic pasted with a litt
  • ¼ teaspoon saffron pre-soaked in hot water (optional)
  • 4 tablespoons good mayonnaise
  • 2 tablespoons Greek yoghurt, crème fraiche or soured cream
  • 1 tablespoon of capers
  • Sea salt and black pepper to taste
  • A handful of chopped herbs e.g. parsley, chives, dill, oregano, mint, basil- mix them up for great flavour
