Roasted Leek Salad

Mix everything together, spread out on a large baking sheet or two lined with parchment. Roast at 200c/180fan/gas6 for 20-25 minutes. Stir a couple of time whilst cooking so they cook evenly. They should be soft and coloured at the tips.

  • 4 medium leeks, shredded in batons
  • Olive oil
  • 1 teaspoon grated lemon zest
  • ½ teaspoon fennel seeds
  • ¼ teaspoon cumin seeds
  • Sea salt and black pepper
