Griddled Flat Breads

 

Mix together the flour, salt and yeast in a large mixing bowl.

Mix the honey with the water and pour into the flour followed by the oil, swiftly stir in sweeping motions with your hand to achieve a soft evenly textured dough- add a little more water if needed. Knead the dough until soft and smooth. Place in a bowl, drizzle with a little oil, cover and put somewhere warm to rest and double in size. Oil your work surface and turn out the dough, divide into 6 balls. Leave for 10 minutes, then flatten them one at a time with your hands, use a rolling pin if you wish, the dough should be thin. Lift onto a preheated griddle and cook until puffed and golden, turn over and continue cooking for about 15 seconds. As you remove them from the griddle, wrap them in clingfilm and cool for later use, or you can freeze them.

  • 7g fast action yeast
  • ½ teaspoon honey
  • 60ml warm water
  • 1 tablespoon vegetable oil
