Cauliflower Cous Cous

 

Prepare the cauliflower, remove all the leaves and cut into small pieces. Place in a food processor and pulse to form cous cous sized pieces. Tip into a steam and cook until just soft.

Tip into a warm serving dish and drizzle with the olive oil, sprinkle with sea salt and black pepper. Gently mix in the lemon zest, lemon juice and mint.

  • 1 cauliflower
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 5 stems of mint, finely chopped
