Basil and Lemon Sugar

Line a baking sheet with parchment paper and scatter the basil leaves and lemon zest on top. Pop into a preheated oven at 120c fan/250f/gas ½ and dry out in the oven for 20-30 minutes. Put the sugar, dried basil and lemon zest into a food processor and whiz to combine. Store in an airtight jar. Use in baking and sprinkle on fruit.

  • Zest of 2 lemons, shredded
  • 8 stems of basil leaves- a good handful
