SPICE WORLD – Rubs, Pastes and Marinades

This is a fantastic day for spice lovers.  We just love hosting our curry courses, there is always a buzz in the kitchen and the atmosphere is deliciously aromatic.  On this course you will roast and blend spices to form the base for some amazing rubs, pastes and marinades and then turn each into a stunning dish to take away.

Here is an Example Menu:

  • Mexican Mole (molée) rub – Hot Smoked Mole Chilli
  • Chermoula Paste – Moroccan Chicken
  • Red Thai Curry Paste – Gaeng Daeng Curry with Pork
  • Garam Masala – Vegetable Biryani, hot smoked and cooked on the BBQ – Lunch
  • Take home garam masala
