This course is designed to inspire you to bring a good balance to your everyday eating. With so many “do’s and don’ts” in the media, we can lose sight of what we should be eating. We will strip back all the layers of confusion and start with seasonal ingredients and cook them simply but with attention to flavour and texture.

* Start the day: Maximise your energy – we will look at making muesli, different milks and sweeteners and the merits of going to work on an egg. You will make Turkish eggs with lebneh and chilli oil

* “Get Well Broth”- using organic chicken- turn into an Asian style broth with vegetable wontons

* Thai salad with chicken and peanuts

* One-pot mixed grain pilaf with spices, seasonal vegatables, feta, fresh herbs and sumac

* Raw chocolate salami – sugar and dairy free, makes a deliciously rich raw chocolate, coconut, fruit and nut salami full of natural goodness.
