Roasted Cauliflower

Put all the ingredients in a bowl and mix together.  Spread out on a baking sheet lined with parchment and roast at 200C/gas 6 until browned at the edges and just soft- about 25 minutes.  Remove and tip into a bowl, add the parsley and toss through.  Serve as a side vegetable or warm/cold as a salad as I suggested.



  • 300g cauliflower, broken into tiny florets
  • 1 teaspoon ground turmeric
  • Zest of ½ a lemon + 1 tablespoon juice
  • 2 tablespoons sultanas or currants soaked in water for 20 minutes
  • 2 tablespoons olive oil
  • Sea salt and black pepper to season

To finish

  • 1 tablespoon chopped parsley
