Crushed New Potatoes with Spring Herbs

Simply cook the potatoes in a large pan of salted boiling water until soft through. Drain, but reserve about 50ml of the water.

Place the potatoes back in the pan, our in the olive oil, sprinkle with sea salt and white pepper and the herbs. Crush with a masher, stir with a spoon and add a little of the cooking liquid to lighten the texture.
