Angela has  designed a range of courses so that you can cook al fresco all year round. On this course you will cook a feast inspired by the Mediterranean and the Middle East using Summer produce using and a range of classic barbecue skills – grilling, roasting, baking to produce a stunning lunch and some take home treats.  Here is your menu:

  • Brined, rubbed and Hot Smoked Fish Sandwiched with Summer Herb Butter, Lemon and Charred Leeks
  • Greek Flat Breads Filled with Feta and Fresh Oregano
  • Kofta- (Welsh Lamb, minced in class with herbs and spices)
  • Coriander and Green Chilli Chutney- Lunch with warm flat breads, relish and salads
  • Smoked Welsh Pork Belly with Summer Herb Rub, finished with a Provençal glaze
  • Baked Pistachio and Almond Cake with Hot Raspberry and Verbena Sauce

We will wrap all your dishes up ready for you to take home and enjoy.
