If you are going to have turkey, then why not really go to town and make it the best ever! Learn how to de-bone, trim, stuff and truss a turkey in 3 pieces. Angela will show you how to produce 3 joints from one bird. Two ballotines using the thigh-leg joints, each stuffed with deliciously rich forcemeat. Then brine, stuff and truss the crown using herbs, citrus and spice for a stunning finish.

Make a great stock reduction and save this for the sauce.

To complete the Turkey Dinner for later – make a Bread Stuffing Terrine, full of herbs, chestnuts, onions and spice, plus a cranberry, pomegranate and clementine relish.

Voila! Festive lunch sorted!

Angela will serve a delicious lunch of hot soup and fresh bread, plus a platter of savoury treats.
