You will learn about different varieties of game and how to prepare it. Then, under Angela’s guidance, you will prepare and cook delicious game dishes. During the preparation, you will pick up a variety of skills including knife work and different cooking methods including brining, smoking, marinading and barbecuing.
We will make the following dishes for you to take home and enjoy –
- Prepare a range of game for a delicious Tajine, using an authentic home roasted and blended Ras el Hanout, this will be served for lunch with Cauliflower Cous Cous
- Game Tikka, cooked over charcoal- flat breads with fresh coriander
- Low and Slow Hot Smoked Game
- Layered game Terrine with Seasonal Pickled Vegetables
Please bring suitable containers to transport your food home safely. We suggest a container for your tikka, foil for your flat breads, a 500ml container for your smoked game and we will supply a foil for your terrine. See you in class!
