We have introduced some Special Masterclasses for 2016.  Sharpen up your knife skills as you prepare the catch of the day.  Prepare some classic fish dishes to perfection with traditional sauces.

In this Masterclass you will discover great flavour combinations and perfect your skills in cooking fish in a variety of ways.  Angela will demonstrate 3 ways to cook fish to perfection, everyone gets to taste each dish to understand how to achieve success with taste, texture and the finished look.  You will then prepare and make a range of classic dishes to take home.

Example Menu

·      Goujons with tartar sauce and aioli. Skills: skinning, cutting, pan, shallow frying, making fresh mayonnaise and flavouring it

·      Calcutta fishcakes with coriander relish. Skills: Skinning, de-boning, roasting and blending spices, Pan-fry

·      Luxury fish pie. Skills: Preparing a range of fish and seafood e.g. prawns, Queen scallops and making a classic béchamel and soufflé potato topping baked to perfection.

·      Escabeche. Skills: curing using citrus, vinegar, spices and vegetables

Lunch will be prepared with Angela as a group, this will be a tasting plate of the following-

Pan fried Scallop with vegetable puree and bacon crumble

Poached Salmon with 3 classic sauces – Hollandaise, Romesco, and Salsa verde served with spinach, roasted leeks and seaweed gnocchi.
