Professional pastry chefs spend years perfecting their craft. The making and baking of pastry is an art that can be developed by applying the right skills. In this class you will learn how to master the art of creating a range of pastries and turn them into delicious bakes. We will cover shortcrust, pate sucree (sweet pastry), hot water crust, choux and puff.

Typical dishes are

* Pissaladiere

* Chocolate and raspberry tartlets

* Lemon choux puffs

* Raised chicken and ham pie

* Salmon en croute/Cheese and herb Palmiers
